Almond Flour Chocolate Chip Cookies Ingredients: 2 Tablespoons of unsalted butter at room temperature 1 Tablespoon of coconut oil ½ cup of brown sugar ¼ cup almond butter 1 large egg at room temperature 1 teaspoon vanilla extract ½ teaspoon baking soda ¼ teaspoon kosher salt ½ teaspoon diastatic malt (optional) 2 cups almond flour ½ cup of chocolate chips (personal preference- Ghirardelli 60% Bittersweet Cacao Chocolate Chips) Directions: Pre-heat oven to 350 degrees Cream together butter, coconut oil & sugar Add almond butter, egg, vanilla extract & mix well Add baking soda, salt & diastatic malt Add almond flour last. Sift if lumpy Fold in chocolate chips Scoop a small ball of dough approximately 2 inchs in size or use a melon scoop and place on cookie sheet about 3 inches apart Bake on cookie sheet (lined with parchment paper-optional) at 350 degrees 10-12 minutes until golden brown Place on cooling rack En
