Almond Flour Chocolate Chip Cookies Ingredients: 2 Tablespoons of unsalted butter at room temperature 1 Tablespoon of coconut oil ½ cup of brown sugar ¼ cup almond butter 1 large egg at room temperature 1 teaspoon vanilla extract ½ teaspoon baking soda ¼ teaspoon kosher salt ½ teaspoon diastatic malt (optional) 2 cups almond flour ½ cup of chocolate chips (personal preference- Ghirardelli 60% Bittersweet Cacao Chocolate Chips) Directions: Pre-heat oven to 350 degrees Cream together butter, coconut oil & sugar Add almond butter, egg, vanilla extract & mix well Add baking soda, salt & diastatic malt Add almond flour last. Sift if lumpy Fold in chocolate chips Scoop a small ball of dough approximately 2 inchs in size or use a melon scoop and place on cookie sheet about 3 inches apart Bake on cookie sheet (lined with parchment paper-optional) at 350 degrees 10-12 minutes until golden brown   Place on cooling rack ...

Wow! It's been a long time. Too long. As I begin my journey to de-clutter my life I noticed that I have not visited my own site for two years. A lot has happened in two years, both good & bad. The kids are growing & turning into wonderful young adults. On the down side, the recent passing of my mom. She did peacefully with family at her side on Dec. 8,2014.  So it's an new year & a new beginning. I hope to achieve many of the goals I have set for myself this year. So hear is to a new year!
