Almond Flour Chocolate Chip Cookies

Ingredients:
  • 2 Tablespoons of unsalted butter at room temperature
  • 1 Tablespoon of coconut oil
  • ½ cup of brown sugar
  • ¼ cup almond butter
  • 1 large egg at room temperature
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • ½ teaspoon diastatic malt (optional)
  • 2 cups almond flour
  • ½ cup of chocolate chips (personal preference- Ghirardelli 60% Bittersweet Cacao Chocolate Chips)


Directions:
  1. Pre-heat oven to 350 degrees
  2. Cream together butter, coconut oil & sugar
  3. Add almond butter, egg, vanilla extract & mix well
  4. Add baking soda, salt & diastatic malt
  5. Add almond flour last. Sift if lumpy
  6. Fold in chocolate chips
  7. Scoop a small ball of dough approximately 2 inchs in size or use a melon scoop and place on cookie sheet about 3 inches apart
  8. Bake on cookie sheet (lined with parchment paper-optional) at 350 degrees 10-12 minutes until golden brown
  9.  Place on cooling rack
  10.  Enjoy!
