Almond Flour Chocolate
Chip Cookies
Ingredients:
- 2 Tablespoons of unsalted butter at room temperature
- 1 Tablespoon of coconut oil
- ½ cup of brown sugar
- ¼ cup almond butter
- 1 large egg at room temperature
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- ¼ teaspoon kosher salt
- ½ teaspoon diastatic malt (optional)
- 2 cups almond flour
- ½ cup of chocolate chips (personal preference- Ghirardelli 60% Bittersweet Cacao Chocolate Chips)
Directions:
- Pre-heat oven to 350 degrees
- Cream together butter, coconut oil & sugar
- Add almond butter, egg, vanilla extract & mix well
- Add baking soda, salt & diastatic malt
- Add almond flour last. Sift if lumpy
- Fold in chocolate chips
- Scoop a small ball of dough approximately 2 inchs in size or use a melon scoop and place on cookie sheet about 3 inches apart
- Bake on cookie sheet (lined with parchment paper-optional) at 350 degrees 10-12 minutes until golden brown
- Place on cooling rack
- Enjoy!
