Girls Night Out & Homemade Pizza

A few weeks ago the boys went out of town. My daughter & I had a girls night out. We started our evening with make your own mini pizza. We then we took the dog to Pet Smart for a new leash. Make your own pizza: Ingredients: 1. Pocketless pitas 2. Pizza sauce of choice 3. Mozzarella & Parmigiano Reggiano cheese 4. Topping of your choice 5. Italian herbs Prepare: In a frying pan, brown pocketless pita on both sides. Spread sauce to pita. Sprinkle the cheese on tops of sauce. Add toppings. Cook in pan until cheese melts. You may want to use a lid to cover pan to quicken the melting process.

Quick Cappuccino

Do you want that cappuccino at home but don't have a cappuccino maker? Well I have a quick solution for you. Quick Cappuccino Ingredients: Fresh brewed coffee Coffee Creamer (like Coffeemate or International Delight) 1. Brew your coffee the way you would usually do it. You may want to make it a little stronger. 2.Pour a generous amount of coffee creamer into your coffee cup. 3. Next, take a fork & whip the cream in the cup until nice & frothy. About a minute or two. (Sorry about the picture, I don't know why it turned out this way.) 4. Pour you hot coffee right into the cup immediately after whipping cream. You should have a nice little foam on the top of your coffee. Top with a little cinnamon & enjoy.

Homemade French Onion Soup

Had dinner out a few weeks ago & the kids ordered French onion soup for the first time. It got 2 thumbs up from both kids. So of course I heard, " Mom can you make some at home." So here is my version of French Onion Soup. French Onion Soup Ingredients 3 large onions 1 tbs butter olive oil 1 tsp Worcestershire 3 14 1/2 oz. cans of beef broth 1 cup of water 1 cup of a dark beer (optional) 1 1/2 cups of mozzarella cheese (shredded) salt pepper 1 loaf of French bread Preheat large Dutch oven on low heat. Melt butter in pot. Add olive oil, about 2 turns around the pot. Thinly slice all onions. Add onions to pot. Cook onions on medium heat until translucent, stirring frequently. Add Worcestershire. Stir onions again, making sure to mix in Worcestershire. Add salt & pepper to taste. Add beef broth, beer & water. Simmer for about 30 minutes. Pre heat oven to broiler setting on low. Quick easy meal that the kids like. We had sliders for dinner. Also known as baby burgers as my daughter once called them. The kids seem to like any thing labeled mini or baby.

My 40 something version of Happy Hour

Friday night dinners are usually pizza & beer. The beer of course is for the 21 & over crowd. Although maybe a beer or two for the kids might not be a bad thing. Just a joke . At least they would crash early. I always looked forward to Friday's when I was in college. My roomies & I would scrape our pockets for quarters & go to Zelda's for Happy Hour for 50 cents drafts & free pizza. How can a poor college student pass up a great deal ? So ever since college, I just can't have pizza without a beer. Here is my 40 something version of Happy Hour. Although the beer is not a draft, we always are trying a new beer.

His Mojo is Back

Today I woke thinking "What should I make for breakfast today? Do they want sausage & eggs or sausage & pancakes?" I'll make my decision while I drink my needed cup of joe. As I enjoyed my first cup down to the last drop, I heard alot of pots banging in the kitchen. So I got up to investigate who was in my kitchen. It was hubby. He had the eggs out, along with some ham & slices of bread. My first thought was, Ok, I won't have to make breakfast for him. Maybe the kids & I will have cereal. Oh good, less to clean up. As I was half way done with my second cup of coffee, he brought me a plate with his version of ham & eggs. Wow! He hasn't cooked me breakfast in years. Not even on Mother's Day. It must be an adrenaline high that he has been on since Friday. You see, he has his second interview for the branch manager position at his company. He is flying to Chicago on Tuesday for it, so please keep your fingers crossed for us.
