Blue Berry Muffins
Ingredients:
· 2-3 tablespoons butter
· ¼ cup of Crisco
· 2 eggs
· 1/3 cup water
· 1 capful of vanilla
· 1 ½ cup of blueberries
· 1 cup of sugar
· 1 cup of Jiffy mix
· 1 cup of flour
· Muffin tins
Preheat oven to 350 degrees.
Cream together Crisco & butter.
Add the following ingredients to butter mixture & mix well:
· 2 eggs
· 1/3 cup water
· 1 capful of vanilla
· 1 ½ cup of blueberries
Mix all dry ingredients together in a separate bowl.
· 1 cup of sugar
· 1 cup of Jiffy mix
· 1 cup of flour
· ½ tsp Baking powder
· ½ tsp baking soda
Slowly add dry ingredients to egg & butter mixture & beat well.
Pour batter into paper muffin tins about ¾ full.
Bake for 20-25 minutes at 350 degrees until top is brown.
